What are Blanched Almonds?

Blanched almonds are whole raw almonds that have been briefly immersed in boiling water in order to loosen the almond skins so that they can be removed easily, usually for certain recipes. You may have noticed blanch being similar to the French word blanc, meaning white, and to blanch comes from old French blanchir, to whiten.

Blanching almonds is pretty simple. Just boil them for a minute, fish them out, pop them out of their skins and let them dry.

Success Tips

  • Don’t dally – The almond skins come off easiest immediately after removing them from the boiling water.
  • Strain them quickly and not thoroughly, so that a little water comes along with them to form puddles to keep them moist.
  • Don’t let them dry out – Once they lose moisture, the skins tend to reattach back to the almonds. Keeping the almonds moist will help you pop the skins off with ease.
