What is Almond Flour?
Almond flour is simply ground almonds.
Almond Meal vs Almond Flour
Almond flour is synonymous and interchangeable with almond meal. You could say blanched almond flour is closer to a flour and natural almond flour is closer to a meal. However, the important thing to know is how fine of a grind you need, and whether you would like natural almond flour (skins on) or blanched almond flour (skins off).
- Natural Almond Flour (Skins On) – If you choose to use almonds with the skins on, the almond flour and any dishes you make with it will be more on the rustic side, and have a beautiful whole almond color. According to Bob’s Red Mill, from whom I also buy almond flour, natural almond flour with the skins on has slightly more vitamin E, but otherwise performs the same, and even “identically” in baking. I find this to be true both in baking and in cooking with almond flour in general.
- Blanched Almond Flour (Skins off) – Your taste or your recipe may call for an ultra-fine blanched almond flour, which makes a lighter colored flour. A finer grind of almond flour is generally best for baked goods. And blanched almonds are easier to make into a finer flour. Tip: If you can’t get a hold of blanched almonds, you can easily blanch whole raw almonds yourself.
Making Almond Flour
You’ll need to set aside about 5 minutes. Sound good? I thought you’d like that! Here’s a summary of all the steps:
Pulse blanched almonds together in a food processor until finely ground. That’s it! Tip: Careful not to overdue it, or you could have almond butter to enjoy on your toast for breakfast tomorrow.

Okay here we go, my favorite part! What can you make with almond flour? Almond flour has both sweet and savory uses. Here are a few of my favorite ways to use it:
- Almond Cream (Crème d’Amande)
- Queen of Sheba Cake (Chocolate Almond Cake)
- Pasta – Add creaminess to pasta sauce, and use as a textured topping to stand in where grated cheese such as Parmesan is usually used.

- Pulse dry blanched almonds together in a food processor until ground into a fine meal. Take care not to over-process them into almond butter.
